The flavour of Malaysian and Singaporean cuisine

The traditional dishes of Malaysia and Singapore are full of flavour and spice. Sashi grew up eating this food as part of his daily life. In fact, his first memories in the kitchen are watching his aunties and mother cook. This exposure helped develop Sashi’s indelible passion for food. Now Sashi is sharing his secrets to creating easy, quick, authentic dishes like the ones his mother made for him.

Traditional Malaysian and Singaporean Dishes

For those of you unfamiliar with Malaysian and Singaporean cuisine, we offer a brief primer. The history of food in this region is fascinating and complex. It is heavily influenced by a variety of cultures such as Malay, Indian, Chinese, and other ethnic and religious groups who settled throughout the country and city state.  


Adding even more complexity, some of the most popular traditional dishes share a name but look quite different depending on where you order it. Take, for example, Chicken Rice. Much like the name suggests, Chicken Rice is a fairly straightforward meal of chicken served with a side of steamed rice. It is a staple of Singaporean cuisine and is even considered one of the national dishes. There, the chicken is simply poached and served with rice cooked in chicken stock alongside an array of condiments. In Malaysian cuisine, the chicken is typically roasted or cooked in a BBQ or honey sauce. The rice is also served differently, rolled into small balls. 


Curry Laksa, another hugely popular dish, also takes on different traits in each region. In Singapore, the spicy soup is thick and made with coconut curry, fish cakes, prawns, and noodles. In Malaysia, the dish is called Assam Laksa or Penang Laksa. The soup is sour, due to a broth base made of tamarind and fish stock. It is finished with vegetables, ginger, fish, and vermicelli.


The prominent flavours found in this part of the world include kaffir lime leaf, lemon grass, shallots, garlic, ginger, and galangal. There are also no shortage of spices used such as coriander, tamarind, turmeric, saffron, and cumin. Rice, noodles, soups, and curries are prevalent, but there are some fun surprises as well. What can you expect to find in each box?

Each box provides you with the spices and special ingredients you need to make one of Sashi’s world class authentic recipes. You need only provide the meat and veg and follow the easy 3 or 4 step instructions. In about 30 minutes you will have a delicious family meal on the table! Here are the ingredients you can expect to find in each box:

BEEF RENDANG

Provided in the meal kit:

Desiccated coconut, beef rendang curry paste, kaffir leaves, chilli, coconut milk

You add:

500g of sliced beef, 200g of diced vegetables


MALAYSIAN CHICKEN CURRY

Provided in the meal kit:

Chicken curry paste, coconut milk, secret spices pack, chilli

You add:

500g of diced chicken, 200g of diced potato, 1 thinly sliced carrot, 2 tbsp of cooking oil


NASI GORENG

Provided in the meal kit:

Rice pack, special curry paste, fried shallot

You add:

400g of sliced chicken or prawns (or 200g of each), 200g of diced vegetables, 1 fresh chilli (optional), 2 eggs, 2 tbsp of cooking oil


CURRY LAKSA

Provided in the meal kit:

Noodles, special curry paste, coconut milk, fried shallot

You add:

200g of sliced chicken or prawn, 200g of diced vegetables, 2 tbsp cooking oil
